Savory Tavel Rosé Quiche with Goat Cheese and Spinach

Ingredients

  • 1 pre-made pie crust (or homemade if preferred)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup Tavel rosé
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 cup goat cheese, crumbled
  • 1/2 cup Gruyère cheese, grated

Instructions

  1. Prepare the Crust
    • Preheat the oven to 375°F (190°C).
    • Roll out the pie crust and press it into a 9-inch tart or pie pan. Prick the bottom with a fork.
    • Line the crust with parchment paper and fill it with pie weights or dried beans. Blind bake for 10 minutes.
    • Remove the weights and parchment, and bake for an additional 5 minutes until slightly golden. Set aside.
  2. Cook the Vegetables
    • Heat olive oil in a skillet over medium heat.
    • Sauté the onion until translucent, about 3–4 minutes. Add spinach and cook until wilted, about 2–3 minutes.
    • Remove from heat and set aside to cool slightly.
  3. Mix the Filling
    • In a large bowl, whisk together the eggs, heavy cream, Tavel rosé, salt, pepper, and nutmeg until smooth and slightly frothy.
  4. Assemble the Quiche
    • Spread the spinach and onion mixture evenly over the crust.
    • Sprinkle the crumbled goat cheese and grated Gruyère over the spinach.
    • Gently pour the egg mixture over the top, ensuring even coverage.
  5. Bake the Quiche
    • Place the quiche in the preheated oven and bake for 35–40 minutes, or until the filling is set and the top is golden.
    • Let the quiche cool for 10–15 minutes before slicing.
  6. Serve and Enjoy
    • Serve warm with a glass of chilled Tavel rosé. Pair with a light salad or roasted vegetables for a complete meal.

  • For extra crispness, brush the crust with an egg wash before baking.
